Pumpkin Spice Cake




I made a cake.

And if made means putting two ingredients into a bowl and mixing them together. Then yes, I made a cake!

I adapted this recipe from Hi Sugarplum. The amazing thing about this recipe is there are only 2 ingredients. You heard me right! Hi Sugarplum orders you not to put eggs or butter into it, but I mixed everything like a regular cake, and plopped the pumpkin mash into the bowl.

This cake is super moist. When I pulled it out of the oven and cut into it, I didn't know if it was finished cooking type-of-moist. It has a hint of pumpkin, and the powdered sugar to finish it off really adds that perfect sweetness.

If I could have a do-over, I'd try to find some spices to add into the batter before baking it. Feel my drift? Like Cinnamon or something!

I'd love to know if you try it out. It's absolutely perfecto! with morning coffee. Not too sweet, but just the right amount of flavor with a big cup of Jo.

And, of course, don't forget to add a touch of fall florals for a festive cake :)
